Elderfower Cordial Steeping

It turns out Elderflower cordial is SUPER EASY to make and the end of May in Bristol seems to still be a good time for finding tasty Elderflower in the hedge rows. Pick your flower heads on a sunny day when they are most likely to be open and smelling sweet – the sweeter the better! You want ones with no brown flowers (as these make it taste bad) and most of the flowers open (you don’t use the closed ones).

Ingredients

  • 800g sugar
  • 15 large elderflower heads (the more the merry)
  • 800ml water
  • 2 lemons

Instructions

  1. Shake off any insects
  2. Pick off flowers – I found I was gently shredding them off between finger and thumb
  3. Heat water and dissolve in the sugar
  4. Add lemon peel (no pith) – I used a potato peeler to erm peel it off
  5. Add rest of lemon sliced
  6. Pour liquid over the flowers
  7. Cover and Steep for 24 hours
